Today Post::Raisin Bread Pudding

Ingredients:

1 raisin bread
1 egg
1 cup fresh milk
1 thsp granulated sugar

Method:

  • Remove crust from bread and break up into tiny pieces. Soak in 1/2 cup of fresh milk.
  • Whisk egg and granulated sugar in remaining fresh milk. Mix in softened bread. Whisk with an egg-beater.
  • Grease a mould and surface with brown sugar. Pour in mixture. Steam for 40 minutes over low heat. Turn content upside down onto serving plate. Serve hot or cold.

Today Post::Chicken and chores (1): Chinese Chicken Salad

I’m not chickening out with this blog, but sometimes my preoccupations lie elsewhere. Cooking then is done in advance for a few meals to have perfunctorily. I had chicken, I had veggies, so lots of things could be done. The Barefoot Contessa’s Chinese Chicken Salad, a recipe for parties and 12 people seemed a good ticket to draw on a Saturday fraught with chores. I give original sizes. See my notes at the end.

Chinese Chicken Salad (From: Ina Garten, Barfoot Contessa, Parties!)

8 split chicken breasts
olive oil
salt, pepper

1 pound asparagus, rends removed, cut into thirds diagonally
2 red bell peppers, cored, seeded, cut into thin strips
4 scallions, sliced diagonally
2 tablespoons white sesame seeds, toasted

Dressing:
1 cup vegetable oil
1/4 cup cider vinegar
1/3 cup soy sauce
3 tablespoons dark sesame oil
1 tablespoon honey
2 garlic cloves, minced
1 teaspoon grated fresh ginger
1 tablespoon white sesame seeds, toasted
1/2 cup peanut butter
4 teaspoons salt
1 teaspoon black pepper

Preheat the oven to 350 °F (I did at 180 °C)
Put the chicken in an oven pan, coat generously with the olive oil, and season with salt and pepper, roast for 35-40 minutes until it is just cooked. Set aside, until cool enough to handle.

Blanch the asparagus until al dente, combine with the bell pepper strips and the scallions. When the chicken is cool enough to handle, cut it in strips, and mix with the vegetables.

Combine all ingredients for the dressing, pour over chicken-vegetable mix. Lastly, add the scallions and sesame seeds. Can be eaten cold or at room temperature.

Notes
Great party idea, with some changes here:
I used small pieces of steamed broccoli instead of asparagus.
I used 1/4 of a red onion instead of scallions.
I used 1/2 teaspoon garam masala instead of honey (I never ever believe that in Chinese food sugar is original).
I didn’t bother toasting those sesame seeds.
I used white sesame paste instead of peanut butter, and light sesame oil.

Today Post::Fried Chicken Liver


I like chicken liver. When we bought chicken liver in our grocery store, Dave asked the cashier if she eats chicken liver. She answered yes so I asked her how she cooked it. She told me that she likes it fried. That was the first time I heard that you can fry chicken livers. I tried it and it was good.

Ingredients:
Chicken liver
Flour
Garlic Salt
Pepper
Oil for frying

Directions:

  • Poke the liver using fork. As many times as you want. This will prevent the liver from bursting when fried.
  • Combine Flour, garlic salt and pepper.
  • Dredge the liver in the flour mixture
  • Fry until golden brown.
  • Drain in paper towels.
  • Serve

When buying things for my daughter, I always look for reviews of the product especially when we buy toys. I believe that product reviews are one of the deciding factors when buying different toys. By knowing the reviews, we will be able to know how good or bad the product is.

Today Post::Cheese Bread Sticks

Ingredients:

10 oz refrigerated pizza crust dough
1 tbsp butter or margarine, melted
1/2 oz grated Romano or Parmesan cheese

Method:

  • Preheat oven to 425~F. Lightly grease cookie sheet. On lightly floured surface, roll out dough to 1/8-inch thickness (about 12 by 8 inch rectangle). Spread with butter/margarine. Sprinkle with cheese.
  • Cut into 32 sticks (6 by 1/2 inch) Place on prepared cookie sheet.
  • Bake 7 minutes or until lightly browned. Serve warm with Marinara sauce for dipping.

Today Post::Why Vegetarian Eating Is Healthier?

Vegetarian eating is a healthy alternative but only if you eat in a healthy and balanced way. Yes, there are many health benefits to eating this way. Eating vegetarian makes sense from a good health and nutritional point of view.

Vegetarians eat plant foods like vegetables, fruits, and grain although some do not include onions, garlic and chives. Generally there are three styles of vegetarianism based on other foods allowed as listed below:

• Vegans are the strictest – they abstain from all animal foods, dairy products and eggs.
• Lacto vegetarians consume dairy products.
• Ovolacto vegetarians supplements with eggs and dairy products

Prudent vegetarianism is highly beneficial. Studies show that vegetarians live longer, have lower blood pressure and cholesterol levels, and register lower incidents of obesity, heart diseases, certain cancers, stroke and diabetes. These are not surprising as vegetarian diet contain less saturated fat, fewer calories, less sugar and more fibers.

Now before anybody starts it is important to understand how to plan a well balanced vegetarian diet. Pregnant women, teenagers and young children should seek proper nutritional guidance before embarking on it.

The main concern in a vegetarian diet is protein. It is needed to build body tissues and consists of units called amino acids. Compared to animal protein like meat, plant foods generally lack certain amino acids. Hence, vegetarians, especially vegans, must eat a variety of plant proteins to get a complete set of amino acids. Soyabeans, a high quality protein, and its products like tofu and soya milk may feature frequently in vegetarian meals.

Vitamin B12 also needs monitoring for its deficiency causes anemia. As animal foods are the only reliable sources of vitamin B12 substitutes like vitamin B12 enriched breakfast cereals are ideal. Furthermore, these cereals are also fortified with iron absorption; one must ensure an adequate supply of vitamin C in diet. Other good sources of iron are spinach, raisins and pulses. For non-dairy product eaters, calcium intake may be obtained from alternatives like sawi, spinach and kalian. If seafood is omitted, zinc required for the immune system is obtainable from whole grains, nuts and soyabeans.

Sprouts contain reproductive power that is of vital importance to human lives and their health. Germinated seeds enormously increase the nutritional value and digestibility. There is an amazing increase the nutritional value and digestibility. There is an amazing increase in nutrients in sprouted pulses as compared to their dried form. In the process of germination the vitamins, minerals and protein increase substantially with corresponding decrease in carbohydrate content. Cooked sprouts (steamed) are best to digest and avail maximum proteins.

Sprouts help in the growth of muscles and tissue of the body. They increase the resistance to diseases and play an important role in rejuvenation of cells.

**** We live in an apartment complex so I have so much to complain here…****

1. I hate it when neighbors alarm clock keeps on beeping which lasts more than an hour…. I swear it makes me want to scream at them.

2. I hate it when neighbors play a very loud music. Are all of them deaf?

3. I love one of my neighbors who keeps on looking out for us.

4. I hate my neighbor for letting their dogs poop on the yard and not cleaning it afterwards. Thankfully, they already move!

5. I hate some of my neighbors when they don’t dispose their garbage in the garbage bin properly. Some of them just leave their garbage near the bin.

6. I love some of my Mexican neighbors who never fail to greet us when we see each other.

Today Post::Roti Mariam

Ingredients:

450g plain flour, sieve
2 eggs
½ cup warm water mixed with 1 tsp salt
2 tbsp ghee
3 tbsp cooking oil
oil for deep frying

Method:

  • Put the flour, eggs, ghee and oil into a large bowl. Mix with the hand, then add water, a little at a time, to form a soft dough. Knead dough for about 10 minutes. Shape into lumps the size of a small potato.
  • On a lightly floured board, roll each lump into a round pancake, about 0.5cm thick.
  • Deep fry the pancakes.
  • Serve with chicken or mutton curry.

For this week, my entry is about pork and vegetables. I always love to eat vegetables so this entry is not just yummy but healthy.

PORK with MIXED VEGETABLES

Ingredients:
Pork (sliced thinly)
carrots
green bell pepper
young corn
broccoli
mushroom
bokchoy
bamboo shoots
snow peas
garlic
onion
pepper
soy sauce
cornstarch (dissolved in water)

Directions:

  • Marinade pork with soy sauce, pepper, and garlic
  • Sautee onion, add marinaded pork and cook for 3 minutes.
  • Add carrots, young corn, bamboo shoots and mushroom. Cook for 1 minute
  • Add the rest of the vegetables (broccoli, pepper and snow peas)
  • Cook until desired tenderness or crispiness of veggies is attained.
  • Seasoned with salt and more pepper if needed.
  • Add dissolved cornstarch. Stir until sauce becomes thick.
  • Serve immediately.

Today Post::Buttered Spinach


As you all know, I love eating greens and I love spinach. This time, I tried cooking the spinach with butter and it turned out really good. Andrea even ate it!

Ingredients:
Spinach (1 bunch)
garlic (pressed)
2 tsp butter
salt
pepper

Directions:

  • Wash spinach thoroughly. Separate stems and leaves.
  • Melt butter and add pressed garlic.
  • Add spinach stems and cook for 2 minutes.
  • Add spinach leaves. Turn it over a few times until all the spinach leaves are wilted.
  • Season with salt and garlic.
  • Cook as long as you want.
  • Drain and serve.

Note: I cooked my spinach longer because Andrea prefers a well-cooked veggies. If it was only me that will eat it, I will cook it just enough for spinach to be wilted.

Today Post::Salad, fragrant with flowers and herbs

Tropaeolum majus “Vesuvius” or Nasturtium (Indian cress) are currently threspassing one of my garden patches in droves, slowly creeping towards my neighbors’ garden. The flowers are edible, they told me.

Meanwhile, we were also having a Saturday in September that could pretend as if it were a Saturday in the middle of summer. I hardly left my patio, making the most of meals and reading outdoors. One of Michael van Straten’s “super salads” was just the ticket: the one fragrant with lots of finely cut fresh herbs.

My purveyor of herbs, Duizendblad (achillea millefolium), probably does this every week, but finally here’s my own take on earth’s own goodies.

Salad, fragrant with flowers and herbs

Salad ingredients: oak leaf lettuce, parsley, radicchio
A handful of toasted, tamari-coated cashew nuts
A few nasturtium flowers
radishes, sliced

Dressing, made with very finely cut fresh herbs: lemon verbena, pineapple sage, sorrel, thyme, oregano, rosemary, chives, mint, sage, parsley, lavas, to which are added a small pressed clove of garlic, juice of 1/2 lime, salt, pepper, olive oil (or other oils of choice).

Instant mood lifter, this dressing, as if one’s mood needs lifting at all one late summer evening.

Today Post::Inariwa Udon

Ingredients:

150g Japanese white fine noodles
small amount of spring onion
1 quail egg
small amount of wasabi
small amount of cold sauce
some amount of cut seaweed

Method:

  1. Blanch the noodles in boiling water for 2-3 minutes.
  2. Remove from heat, soak in ice water till cold and dish out.
  3. Sprinkle some cut seaweed, serve with spring onion, quail egg, wasabi and cold sauce.

Traveling with Andrea is not a big problem for us because she really loves to travel. We might be going to Mobile for a week next month (hopefully). I am really excited to spend some time in Mobile with Mischa and Ben.

I am really lucky that I don’t have problems with my baby in terms of traveling. Today Post::Yaki Udon

Ingredients:

200g Udon
20g carrot, cut into strips
300g long cabbage, cut into strips
2 mushroom, cut into slices
300g chicken, cut into slices
5 slice squid
5 pcs shrimps
20g green pepper, cut into strips
1 egg

For seasoning

small amount of Japanese light soya sauce
small amount of peppers
small amount of salt
small amount of Mirin

Method:

  1. Blanch the noodles in boiling water for 1 minute, remove from heat and set aside.
  2. Heat oil, stir-fry the seafood and meat till cooked, set aside.
  3. Add in all the vegetables, stir-fry well.
  4. Toss in the cooked seafood and meat.
  5. Add the noodles and seasoning, quick-fry evenly, dish out and served.

Today Post::Riding the mushroom wave: shiitake salad

I’ll admit: I’m not such a fan of mushroom. Perhaps it’s not growing up in a mushroom culture. Perhaps it’s Tchernobyl and not being sure about just brushing the dirt off mushrooms instead of rinsing them. But this time the portobello monsters were followed by Dutch-labelled shiitakes. The garlic procedure served just fine here too.

Shiitake Salad

shiitake mushrooms, brushed, dirt removed
garlic
olive oil
salt, pepper
radicchio
blue grapes, halved
parsley for garnish

Fry the garlic in olive oil, add the mushrooms. Cut the radicchio leaves in long narrow bands, and add to the mushrooms. Fry only a short time, until the radicchio barely startts to wilt. Remove from the heat, put on plates, add grapes, parsley, and speed to the patio to eat while watching a beautiful sunset.

Today Post::Salabat (Ginger Tea)


It has been raining the whole week…. a perfect time to have a cup of salabat. The cup of salabat or in English ginger tea help eased the sore throat that I am experiencing…

Salabat is a hot ginger tea made by boiling crushed ginger in water. Brown sugar is used to sweetened it. Adding a twist of lemon is a good variation of salabat.

For my salabat, I don’t have to do the traditional one because I just bought instant salabat at the Filipino store… It is as simple as making instant coffee!
