Today Post::Baked Chicken with Rosemary


For our dinner last night, I decided to bake a chicken with rosemary. When we went to Mom’s last weekend, I cut some rosemary from her garden. I love the smell of rosemary.

Ingredients:
Whole chicken
garlic salt
garlic powder
butter
pepper
rosemary

Directions:

  • Clean the chicken thoroughly. Remove excess fats.
  • Season the chicken with garlic powder, garlic salt and pepper including the inside cavity.
  • Brush butter all over the chicken and insert ample amount of butter under the chicken skin and put some in the chicken cavity too.
  • Sprinkle rosemary all over the chicken and put more rosemary inside the cavity.
  • Bake uncovered at 350F for two hours
  • Serve.

While waiting for the chicken to be thoroughly cooked, I can smell the aroma of the rosemary all over my kitchen. It smelled so good!

Today Post::Rodent-eating Plant

A plant that traps and devours animals as big as rats has reportedly been discovered by British botanists in the jungles of Palawan province, Philippines.

Its discoverers have named the plant Nepenthes attenboroughii, in honor of British nature expert and television host Sir Richard Attenborough, the London-based Daily Mail newspaper reported Tuesday.

The carnivorous plant, a member of the "pitcher" family, can grow to a length of more than four feet.

According to scientists, animals are lured into its slipper-like mouth, where they either drown or die of exhaustion before being slowly dissolved by digestive enzymes.

Today Post::Lappy's Plea

This is Lulu’s Lappy (laptop) and I am asking your generous hearts to help me pray for my freedom.

I have been a diligent worker for the past 2 years without compensation. I barely take a break. I am up in the wee hours all night because my owner decides to visit blogs. Today Post::Grilled Chicken Leg Quarters

I love buying chicken quarters because this is the cheapest cut of chicken that I can find. Besides, me and my friends like grilled chicken so I decided to make some.

Ingredients:
Chicken Quarter (remove fat)
Garlic
Garlic Salt
Pepper
Lemon
Soysauce

Directions:

  • Marinade chicken overnight.
  • Grilled in slow charcoal fire.
  • Serve.


It is very easy right? Please remember to cook the chicken thoroughly.

Today Post::Tuna Sandwich

I was in the mood for tuna sandwich. I just wish that there is Lady’s Choice Tuna Spread here that way it will be easier for me. Dave does not like tuna sandwich so I end up eating it alone.

Anyway, I made a tuna sandwich with the following:

Ingredients:
1 small can tuna in chunks (drain)
mayonnaise
pepper
pickle relish
boiled egg (diced)
onion (diced)

Directions:

Mix altogether. Spread in a whole wheat bread.

Today Post::Small Talk Six (Aug 15, 2009)

Rest and Relax….

Six things that you can think that will make you well rested or relaxed.

  1. I used to read and it relaxes me.
  2. I love a full body massage, it really feels good and it relaxes me. The best massage that I had was in Waterfront Hotel in Mactan, Cebu… it was pricey but really good.
  3. Soaking in a bathtub with scented candles all over the bathroom is really relaxing.
  4. Long hot showers relaxes my whole body too.
  5. Watching a movie is also a form of relaxation to me. Dave and I are such movie addicts… watching movie is one of our bonding moments.
  6. Cooking/Baking is also a good way to relax.

Today Post::Ripe Prune Compote

The thing to do with ripe prunes is just pitting them, throwing a dash of finely ground, good quality cane sugar over them, and letting them marinate in the fridge for 1-1,5 hours.

NO stewing, NO heat, NO cooking. That would be a spoiler, “The Swiss Guy” says. See posts with that label. Make this your new habit with (ripe) fruit.

This can be done with pitted grapes, apricots, berries, etc.

And I wouldn’t be the author of a seriatim sugar rant if I wouldn’t disobey about sugar in this particular case: I substituted the sugar with 1 teaspoon of cinnamon powder and, as I happened to have it a knife point of star anise powder. With prunes this can be done, they’re sweet enough. I would use sugar with acidic berries.

Today Post::A for Alkalic: Grapefruit Watermelon Juice

Felt like having lunch this week at our local mall, at one of our newer chains devoted to “exki”-site, fresh food, waiting for you to be picked at a counter. Downside is, notwithstanding the upside that the food is good: it comes with a ton of packaging, and it doesn’t come cheap. One of their ads for fruit teas paired grapefruit with watermelon.

So why not steal with our eyes? A great combo. Both watermelon and grapefruit are alkalic - not bad when most of our foods tend to be low on the pH scale. Here’s fruit juice pure, watermelon and grapefruit.

Today Post::Food Trip Friday # 6

Food Trip

It’s Friday once again and time to share Food Trip Friday to my fellow food trippers. My entry for this week is Beef Steak (Bistek)… I had thin sliced beef loin and I decided to make this dish. At first, Dave was not sure what was served to him. I had to explain that it is beef dish and that he needs to try it.

Filipino Style Beef Steak

Ingredients:
Beef Loin
A1 Seasoning
Garlic Powder
Black Pepper
Cooking Wine
Olive oil
Onion (sliced in rings)

Directions:

  • Marinade the beef with A1 Seasoning, Garlic Powder, Black Pepper and Cooking Wine.
  • Bring to boil and simmer until the sauce is almost gone.
  • Season with olive oil and add onion rings. Cook for one minute.
  • Serve with rice.

Today Post::Tom Yum Goong

(Hot and Sour Prawn Soup)

Serves 4-6

Ingredients:

500g medium-sized raw prawns
1 tbsp oil
2 tbsp red curry paste
2 tbsp tamarind concentrate
2 tsp ground turmeric
1 tsp chopped red chillies, optional
4 kaffir lime leaves, shredded
2 tbsp fish sauce
2 tbsp lime juice
2 tsp soft brown sugar
¼ cup (7g) fresh coriander leaves

Method:

  1. Remove the prawn heads and set aside. Peel and devein the prawns, keeping the tails intact and reserving the shells.
  2. Heat the oil in a large wok or pan. Add the prawn shells and heads and cook for 10 minutes over medium heat, tossing frequently, until the shells and heads are deep orange.
  3. Increase the heat and gradually add 1 cup (250ml) of water and the curry paste to the wok. Boil for 5 minutes, or until reduced slightly. Add 1.75 litres of water, simmer for 20 minutes, then strain, reserving the stock. Discard the heads and shells and return the stock to the wok.
  4. Add the tamarind concentrate, turmeric, red chilli and lime leaves to the wok. Bring the mixture to the boil and cook for 2 minutes. Add the prawns and cook for 5 minutes, or until the prawns turn pink. Stir in the fish sauce, lime juice and sugar. Pour into bowls and sprinkle with the coriander just before serving.

Waxing nostalgic when reading The Texas Cowboy Kitchen by Grady Spears and June Naylor is no art: there’s plenty of stuff to pine for. But we’re happy to discover this fine “Watermelon Salsa”, served originally with pork chops. Part I of Entertaining, Southwestern Style, can be read here.

Watermelon Salsa

From The Texas Cowboy Kitchen (ISBN 978-0-7407-6973-3)

2 cups of watermelon, seeded, finely diced
1 apple, finely diced
1 red onion, julienned
2 cloves of garlic, minced
1 mango, peeled, diced
2 jalapeños, seeded, diced
1 bunch cilantro, leaves only
2 tablespoons of sugar (of course, I did not add that - see The Sugar Rant)
salt and pepper
juice of 2 limes
splash of rice wine vinegar (or any other)

Combine everything and chill well before serving.

Today Post::Entertaining, Southwestern Style (1/2)

When some contacts flew in from the Southwest, they smuggled in a fine spice for me: chipotle or smoked chilli powder (and a stash of black beans). With a summer so benign on us, it was time to draw a big gun: The Texas Cowboy Kitchen, by Grady Spears and June Naylor. A beautiful cookbook with black and white historical photographs. Not that we can even begin to recreate the savors of Tex-Mex, the taste of the frontier, or that our temperatures rival cicada-ridden nights.
It pays off to be an Honorary Texan (mug owner): my guest oohed and aahed his way through the meal. From “Pork Tenderloin with Watermelon Salsa”, I prepared the Watermelon Salsa. And “Pan Roasted Trout Ranchero”, along with Oven-roasted Potatoes. Here’s the recipe for the Trout Ranchero. For Watermelon Salsa, see next post.
Pan Roasted Trout Ranchero

From The Texas Cowboy Kitchen (ISBN 978-0-7407-6973-3)

Serves 4-6

3 tablespoons olive oil
4-6 trout fillets with skin, butterflied
salt and pepper
2 tablespoons butter (or olive oil)
1 onion, peeled, cut in half, sliced into thin half-moon ribbons
4 jalapeños, seeded, cut into matchsticks
4 cloves of garlic
4 roma tomatoes, seeded, cut in halves
juice of 2 limes
cilantro sprigs, jalapeño slices, and lime wedges for garnish
and chipotle chilli powder (my addition)

Note: I refer to the book to read how to fry trout: I followed another easy method: stewing fish fillets without skin at low temperature in the oven, in a liquid, olive oil: 10-12 minutes at 110 °C. I used lieu noir - koolvis - American pollack.

Next, the only thing I had to do was to prepare the Ranchero sauce in a pan: heat the oil, sauté onion, jalapeño and garlic for about 3 minutes. Add the tomatoes, sauté for another 3 minutes.

Remove from the heat, spoon the veggies over the fish. Add the garnish. Before serving, sprinkle with chipotle chilli powder.

The easiest recipe, the cookbook says, and I always do Easy. I’m way behind with cookbooks: The Cowboy Kitchen was a present two Christmases ago. But, as Lionel Trilling would say for great literature: cookbooks come to you at the right time.

Today Post::Dad's Wine

Dad Bill makes wine from their small vineyard. The first time, I saw their own wine in a bottle, I was so amazed. He then showed me how he made it and all the other ingredients that he used. I saw some that was in the process of fermentation. It was a new experience for me and I really enjoyed it.

He gave me a bottle of pear wine. Until now, it is in our wine rack. I hate to open it because I really want to keep it and besides I don’t drink (anymore! lol)…..

Today Post::Fresh Lima Beans


Thanks to Mom’s Garden I have fresh Lima Beans. Since I lived in the South, I learned to eat different beans and peas…. they are part of a southern meal.

We harvested some lima beans when we went to Mom’s last weekend. She only planted one row of lima beans and it didn’t produce a lot not like the green beans and the purple beans. We were able to harvest enough to cook for a meal. I shelled the pods of the Lima beans and cook it as part of our dinner last night.

Here’s my boiled fresh lima beans recipe:

Ingredients:
Lima beans
water
garlic powder
pepper
1 cube of chicken cube
2 slices of bacon

Directions:
Wash the beans thoroughly. Combine all ingredients and bring to boil. Simmer until lima beans become tender. Remove the lima beans from the water through a slotted spoon. Serve.

Today Post::Let's Talk Pro Football

Few more weeks and football season will start. We are big fans of football. During football season, our weekends are mostly dedicated to watching the games on TV. We are for Steelers! We like Steelers and its winning tradition. Their defense is really awesome. We were so happy last year when the Steelers won the Super Bowl. We hope that this year, they will also perform well.

Although we are Steelers fan, I think that Matt Ryan will be the one who will perform extraordinarily this year. Matt Ryan had a good rookie year. He did well for a rookie quarterback so I believe that he can surpass his performances last year because this year he already have an experience being a pro player. Another factor that will help Matt Ryan performed extraordinarily is their running back Michael Turner. Having Michael Turner as a running back will ease the pressure on Matt Ryan.

I like football so much that I even joined Football Fantasy. Football Fantasy is a lot of fun. Today Post::Tom Kha Gai

(Chicken and Coconut Soup)

Serves 4

Ingredients:

2 cups (500ml) coconut milk
1 cup (250ml) chicken stock
5cm piece of fresh galangal, peeled and sliced
3 chicken breast fillets, cut into bite-size pieces
1-2 tsp finely chopped red chillies
1 tbsp fish sauce
1 tsp soft brown sugar
½ cup (15g) fresh coriander leaves
fresh coriander leaves, to garnish

Method:

  1. Combine the coconut milk, stock and galangal in a pan, bring to the boil and simmer over low heat for 10 minutes, stirring occasionally.
  2. Add the chicken pieces and chilli to the pan and simmer for 8 minutes.
  3. Stir in the fish sauce and brown sugar. Add the coriander leaves and serve the soup immediately, garnished with the remaining coriander leaves.

(Stir-fried Rice Noodles)

Serves 4

Ingredients:

250g dried thick rice stick noodles
2 tbsp oil
3 cloves garlic, crushed
1 tsp chopped red chilli
200g chicken thigh fillets, thinly sliced
100g raw prawn meat, roughly chopped
100g fried tofu, cut into thin strips
75g garlic chives, chopped
2 tbsp fish sauce
2 tbsp lime juice
2 tsp soft brown sugar
2 eggs, beaten
1 cup (90g) bean sprouts
¼ cup (40g) roasted unsalted peanuts, chopped

Method:
  1. Soak the rice stick noodles in boiling water for 10 minutes, or until they are soft. Drain and set aside.Heat the oil in a wok or large frying pan. When the oil is hot, add the garlic, red chilli and chicken and stir-fry for 2 minutes.
  2. Add the prawn meat and stir-fry for another 3 minutes. Toss the tofu, garlic chives and rice sticks into the wok, cover and cook for another minute.
  3. Add the fish sauce, lime juice, brown sugar and eggs to the wok and toss well with tongs or 2 wooden spoons until the egg is set. Divide the noodles among 4 serving bowls, sprinkle with the bean sprouts and peanuts and serve immediately.

(Thai Fish Cakes)

Serves 4-6

Ingredients:

500g firm white fish fillets
4 kaffir lime leaves, finely shredded
1 tbsp chopped fresh Asian basil
2 tbsp red curry paste
100g green beans, very finely sliced
2 sprong onions, finely chopped
oil, for shallow-frying

Cucumber Dipping Sauce:
1 Lebanese cucumber, finely chopped
3 tbsp sweet chilli sauce
2 tbsp rice vinegar
1 tbsp chopped unsalted roasted peanuts
1 tbsp chopped fresh coriander

Method:

  1. Place the fish in a food processor and process for 20 seconds, or until smooth. Add the lime leaves, basil and curry paste and process for 10 seconds.
  2. Transfer the fish mixture to a large bowl, add the green beans and spring onion and mix well. Using wet hands, form two rounded tablespoons of the mixture at a time into flattish patties.
  3. To make the cucumber dipping sauce, combine all the ingredients in a bowl.
  4. Heat the oil in a heavy-based frying pan over medium heat. Cook 4 fish cakes at a time until they are golden brown on both sides. Drain on paper towels and serve immediately with the dipping sauce.

I love fish and I can eat fish everyday. One of my favorites is the red snapper. I can eat red snapper whatever way it is cooked: grilled, fried, soup, “paksiw”, baked… or whatever….

Red Snapper is one of the most popular of all white fish. It is low in saturated fat and sodium and is a very good source of protein. Red Snapper can reach weights of up to 35 pounds, but most fish sold are well under that size. Red Snapper has a great, firm texture and a sweet, nutty flavor that lends itself very well to everything from hot chilies to subtle herbs. And, of course, Red Snapper is excellent for grilling.

TIP: When buying whole Red Snapper look for clear, red eyes, bright red skin that fades towards the belly. If you are looking for fillets try to buy it with the skin on.

For this week my entry is a goat dish. This is a very famous filipino dish. Calderetang Kambing. All my brothers love to slaughter a goat and make different dishes out of it… They say that it is really tasty but… goat meat has a smell and after taste that I don’t like.
