Ingredients: ½ cup peanuts, dry fry till brown, remove skin and grind coarsely Grind fine: 3 tbsp brown sugar Method:
1 (50-70g) potato, peel, boil and mash
3 tbsp boiled water, add to mashed potato and mix well
12 dried chillies, cut and soak in hot water to soften
2 cloves garlic
½ cup water
salt to taste
1 tbsp tomato puree
1 tbsp vinegarIn a saucepan, put chilli-garlic paste, brown sugar, water and salt and tomato puree. Bring to the boil, stirring to dissolve sugar. Add vinegar and mashed potato (push potato through a sieve). Reduce heat and boil stirring all the time till a little thick. Add ground peanuts, stir and remove from heat.
