Cherry Compote
The Swiss Guy says that the best thing about cherries is having them pitted and raw, with a tiny bit of sugar sprinkled over. Cherry Compote. It’s the type of salad you have without any trimmings. No heat here, please no. You may remove the pits at noon, keep the cherries cold, and eat this as main course in the evening after a sweltering day.
Or you may add some cream - in the case of sweet cherries hardly necessary, as opposed to the more sour berry. If you don’t know who The Swiss Guy is, look him up under this label. The Swiss Guy is all for combining sourness with cream.
Cherry Compote
250-500 g very ripe cherries, pits removed
tiny amount of sugar
2 dl cream
250 g cottage cheese
1/2 teaspoon cinnamon powder
Whip the cream, and add to it the cottage cheese. Add sugar or, as I did, ever stingy with the big bad “-ose”, 1/2 teaspoon of cinnamon powder.
