SecretBlog: Salad Eggplant and Okra

Well, I am very lucky to have fresh source of vegetables (at Mom’s garden). This is the first time that we harvested some eggplant so I decided to make a salad eggplant plus okra.


Ingredients:
Eggplant
Okra
Tomato (diced)
Ginger (diced)
Spring onion (diced)
black pepper
bagoong (salted fish sauce)

Directions:

  • Boil eggplant when almost done add okra. Drain. Slice eggplant and reserve.
  • Mix tomato, ginger and spring onions. Season with bagoong and black pepper.
  • Add vegetable to the mixture.
  • Serve with lots of rice.
