Heart of the Matter #27: The Best of June's Produce

For Heart of the Matter #27, a heart-healthy roundup devoted to “The Best of June’s Produce” I combine 2 of my favorite June food items in 1 salad. Without ado.

Young herring and fresh pea salad

See foodstylists Livia Claessen and Henri Kleinblatt,
whose salad is Young herring & fava beans.

1 head of lettuce
2 young herrings, cut into 2 cm/1 inch-pieces (I used 3)
fresh peas (fresh fava beans)

Cook peas briefly in salted water. Drain, and cool in chilled water.

Cut herrings, wash lettuce, and combine all ingredients.

Prepare a dressing with mustard and red wine vinegar - drizzle it over the ingredients, and have yourself a freshly made, home-styled designer lunch.
