Summer salad: young herring
This is the classical way to eat maatje -Dutch for little chum- young herring. Best eaten while sitting along a river quay around summer solstice.
Summer salad: young herring
per person:
1 maatje or young herring
the green parts of 2 scallions, cut lengthwise
1/3 of red onion, in fine slivers
a few tomato slices or parts, marinated in red wine vinegar
a few leaves of salad
Some lemon for garnish
Present everything nicely on plate. Serve immeditely with a small glass of junever (jenever).
